5 Easy Breakfast Recipes for Busy Mornings

Forget cereal and milk or your typical running a late glass of juice.

These breakfast recipes are so easy, full of protein and healthy fats that you will feel more energized and less hungry during the rest of your day.

It might feel discouraging when you aim for breakfast foods from inspirational pictures on social media and feel you have to go to baking school to make them a reality.

We want to share what we think is a breakfast that you actually have time and the will to make for yourself.

Here are 5 easy breakfast recipes for busy mornings!

1. Cheesy Eggs (4 Minutes)

Yup, it doesn’t have to get more complicated than that.

Replace your typical sandwich with eggs and you will have a nutritious and healthy breakfast filled with lots of protein. Just like a sandwich you can put a few slices of cheese on the eggs to make it a bit tastier!

Ingredients:

  1. 3-4 eggs
  2. Your favourite cheese

Steps:

  1. Fry your desired amount of eggs
  2. Put a few slices of your favourite cheese on top just before serving
  3. Enjoy!

2. Turkish/Greek Yoghurt with Granola (3 Minutes)

Cereal and milk is a tasty breakfast, but not very filling and healthy.

Replace your milk with full fat Turkish or greek yoghurt and replace your cereal with granola and add nuts and seeds for plenty of healthy fats and fibres.

For a bit more sweetness you can add some berries, frozen or fresh. A very tasty breakfast that feels like you are eating a dessert!

Ingredients

  1. Turkish/Greek Yoghurt
  2. Granola
  3. Extras
    1. Almonds/Pecans
    2. Berries
    3. Honey
    4. Coconut flakes
    5. Peanut butter

Steps:

  1. Take a few scoops of your yoghurt
  2. Add the granola
  3. Add your desired extras
  4. Enjoy!

3. Upgraded Oatmeal (4 Minutes)

Oatmeal, even though being filled with lots of goodness, could definitely use an upgrade.

To make a portion of oatmeal more exciting and satisfying, add some of the awesome extras to customise it to your liking.

Ingredients:

  1. Rolles oats
  2. Extras
    1. Almonds and Pecans
    2. Chia and Pumpkin seeds 
    3. Cinnamon
    4. Milk
    5. Blueberries 
    6. Coconut flakes
    7. Peanut butter

Steps:

  1. Pour 1dl oats into a bowl
  2. Mix in 2dl water
  3. Microwave for around 2.5 minutes (depending on the oats and microwave)
  4. Add your extras
  5. Enjoy!

4. Banana Pancakes (5 Minutes)

This recipe couldn’t get easier, the steps are the following:

Ingredients:

  1. 2 eggs
  2. 1 banana
  3. Berries
  4. Peanut butter

Steps:

  1. Mix one mashed banana with two eggs
  2. Fry butter and pour the mixture in the pan
  3. Add some goodness like berries or peanut butter
  4. Enjoy!

That’s it! A tasty breakfast that has lots of protein from the eggs and electrolytes from the bananas.

This recipe is one of my go to’s if I have bananas that are soon going bad, and want to make something delicious with them.

5. Egg Muffins (30-40 minutes)

Have some time to prepare a more luxurious breakfast? Want to impress your family or friends, or make a surprise breakfast for your partner?

This is maybe not the quickest recipe of the bunch, but certainly one of the most delicious, and you can make a batch of them that will last the entire week.

These egg muffins can be customised to your liking, and you can basically add anything you would like to have.

Ingredients:

  1. 12 eggs
  2. 1 can of pesto
  3. Feta cheese
  4. Sun-dried tomatoes
  5. Olives
  6. Spinach
  7. More ingredients to your liking, examples:
    1. Bacon
    2. Broccoli
    3. Anything your stomach longs for

Steps:

  1. Set the oven to 175 degrees Celsius
  2. Mix eggs in a bowl
  3. Add pesto
  4. Add crumbled feta cheese and spinach
  5. Pour mixture into a muffin tin
  6. Add the olives and sun-dried tomatoes
  7. Add extra ingredients 
  8. Bake in the oven for 15-20 minutes

As mentioned, making them takes some time initially, but after they are made you just have to warm them in the microwave, actually making them the quickest breakfast 😉
